Three Bean Salad

Ingredients

  • 1 Pound fresh green, yellow and purple beans (You can use just green beans if that is all that is available)
  • 4 Tablespoons extra virgin olive oil
  • 2 Tablespoons white balsamic vinegar
  • 1 tablespoon fresh thyme
  • 1 tablespoon whole grain mustard
  • 1 tablespoon fresh lemon juice
  • 1 pinch kosher salt
  • 1 pinch coarse ground pepper
  • 1 pinch cayenne pepper

Optional

  • 1 Zest 1/2 lemon

Directions

Beans
Step 1
Cut off the ends of the beans. Steam for 2-3 minutes. Drain in a collander and rinse with cold water.
Dressing
Step 2
Whisk all the ingredients together in a small container. Adjust salt and pepper as needed.
Combine
Step 3
Pour the dressing over the cooked beans and lightly toss. Serve at room temperature.
