Ingredients
- 1 Pound fresh green, yellow and purple beans (You can use just green beans if that is all that is available)
- 4 Tablespoons extra virgin olive oil
- 2 Tablespoons white balsamic vinegar
- 1 tablespoon fresh thyme
- 1 tablespoon whole grain mustard
- 1 tablespoon fresh lemon juice
- 1 pinch kosher salt
- 1 pinch coarse ground pepper
- 1 pinch cayenne pepper

Beans

Step 1

Cut off the ends of the beans. Steam for 2-3 minutes. Drain in a collander and rinse with cold water. |
Dressing

Step 2
|
Whisk all the ingredients together in a small container. Adjust salt and pepper as needed. |
Combine

Pour the dressing over the cooked beans and lightly toss. Serve at room temperature. |
