A Feast of Friends

This is one of our standard dishes. It’s the equivalent of a pantry dish. The reason we weren’t too specific about the ingredients is because it kind of works with whatever you have. Green onions only…great! Top it at the end. No spinach, yes kale, yum. The keys are really grits (or polenta), black beans, eggs, and cheese. Everything else can be modified to taste. The great thing is that the meal is filling, hits the major food groups, is adaptable, and is delicious! Plus it takes 15 minutes max. to make. YUM! The only issue is the moral one…when you eat your friends.

Bean’s beans

Ingredients

  • 1 cup grits
  • 1 box black beans
  • 1/2 jar salsa
  • 1 tomato (diced)
  • 1/2 onion (diced)
  • 4 cups spinach (chopped)
  • 1/2 cup shredded cheese
  • 2+ eggs

Directions

Step 1
This is one of our go to meals. Protein, veggies, filling, delicious. Start by cooking the onions in a pan with some olive oil. Add the beans, spinach, tomato, salsa, and any mix of spices to flavor (S&P, cumin, cayenne, chili powder, paprika...whatever you have). Cook on a simmer so it's hot by the time you're ready to serve.
Step 2
While that is cooking set up the grits to cook following the instructions on the box. We sometimes use broth, sometimes water. Also make sure to shred the cheese (if you have a block).
Step 3
At the same time, cook the egg(s). Sometimes we poach, sometimes we fry. Always we aim for over easy.
Step 4
Plate the grits, top with beans, top with egg, top with cheese. Eat!
