Rice with raisins and coconut

Ingredients
- 1 cup long-grain rice
- 1 1/2 cup chicken broth
- 1/4 cup black raisins
- 1/4 cup dried, shredded coconut
- 2 tablespoons butter (optional)

Combine the rice and broth in a saucepan. Bring to the boil and add the raisins and coconuts | |

Cover closely. Let simmer exactly 17 minutes. Uncover the rice and fluff in the butter. |
