Rice doesn’t have to be boring

Good side dish with any chicken recipe.

Rice with raisins and coconut

Serves 4

  • 1 cup long-grain rice
  • 1 1/2 cup chicken broth
  • 1/4 cup black raisins
  • 1/4 cup dried, shredded coconut
  • 2 tablespoons butter (optional)


Step 1
Combine the rice and broth in a saucepan. Bring to the boil and add the raisins and coconuts
Step 2
Cover closely. Let simmer exactly 17 minutes. Uncover the rice and fluff in the butter.
