Spring/summer pasta

This is a really easy anytime meal. And it tastes good (which should not be surprising, given that I’ve posted it here).

Pasta with arugula

Prep time 5 minutes
Cook time 15 minutes
Total time 20 minutes
This is a fairly light pasta dish. Good for summer!


  • 8oz spaghetti
  • 3 cups arugula
  • 3 tablespoons olive oil
  • 5 cloves garlic
  • 1/2 lemon
  • dash red pepper flakes
  • shredded parmesan
  • salt and pepper


Step 1
Bring 3 quarts of water (salted) to a boil. Once boiling, add the spaghetti and cook for 9 minutes. Drain.
Step 2
Heat the olive oil over low heat. Add the garlic, chopped, until browned.
Step 3
Once drained, put the pasta in bowl. Pour the olive oil and garlic mixture over top. Add arugula. Squeeze the lemon juice over it and sprinkle red pepper flakes and salt and pepper. Toss well.
Step 4
Serve individually and top with parmesan.
