Quiche revival

Trying to use up some leftover food items (including broccoli and eggs), I thought a quiche could be good. I didn’t want to go the broccoli cheddar route, though. I perused online for ideas, and this is a blend of several/my own spin. It was delicious with a simple green salad on the side for dinner…and for lunch the next day!

Broccoli Quiche

This is a flavorful quiche that tastes great for dinner.

Ingredients

  • 1 pre-made pie crust
  • 3 cups chopped broccoli
  • 2 cloves garlic
  • 6 eggs
  • 1/2 wheel of garlic and herb Boursin
  • 1/2 cup parmesan cheese
  • Salt and pepper

Directions

Step 1
Follow the direction on the pre-made pie crust. The one I used required 11 minutes at 400 degrees.
Step 2
While the crust cools, sauté the garlic and broccoli in a little bit of butter or olive oil at medium heat for about 5 minutes.
Step 3
In a bowl, mix the eggs, Boursin, parmesan, salt and pepper. Turn the oven back on to 375 degrees.
Step 4
Put the garlic and broccoli mixture in the bottom of the pie crust. Cover with the egg mixture, making all is evenly distributed.
Step 5
Bake for 35 minutes (or until it sets). Let cool for 15 minutes before cutting and serving.
