Grilled halloumi salad

Ingredients

  • 1 packet halloumi (cut into slices)
  • 2 tablespoons EVOO
  • pinch red pepper flakes
  • 1 clove garlic (minced)
  • 1 cubanelle pepper
  • 1 tablespoon honey
  • 1/2 red onion
  • 5 handfuls greens (arugula, mache, baby spinach)

It pairs nicely with couscous seasoned with scallions, nuts, dried fruit, and seasoned with lemon zest, EVOO, and S&P.

Directions

Step 1
Mix together the EVOO, red chili flakes, garlic, and honey.
Step 2
Finely slice and seed the cubanelle and the onion.
Step 3
Use half of the EVOO mixture to marinate the pepper and onion. Use the other half to marinate the halloumi.
Step 4
Grill the peppers and the halloumi. (A griddle pan works just as well.)
Step 5
Wash and plate the greens. Once the veggies and halloumi are done grilling, use them to top the salad. Season with S&P.
