Grilled halloumi salad

Ingredients
- 1 packet halloumi (cut into slices)
- 2 tablespoons EVOO
- pinch red pepper flakes
- 1 clove garlic (minced)
- 1 cubanelle pepper
- 1 tablespoon honey
- 1/2 red onion
- 5 handfuls greens (arugula, mache, baby spinach)

It pairs nicely with couscous seasoned with scallions, nuts, dried fruit, and seasoned with lemon zest, EVOO, and S&P.

Step 1 | |
Mix together the EVOO, red chili flakes, garlic, and honey. | |

Finely slice and seed the cubanelle and the onion. | |
Step 3 | |
Use half of the EVOO mixture to marinate the pepper and onion. Use the other half to marinate the halloumi. | |
Step 4 | |
Grill the peppers and the halloumi. (A griddle pan works just as well.) | |
Step 5 | |
Wash and plate the greens. Once the veggies and halloumi are done grilling, use them to top the salad. Season with S&P. |
